Who is your role model/mentor: My father who was an extraordinary businessman (he recently retired).

What do you like most about your job: The freedom, creativity and unknowingness of not knowing where I will be in a year. I guess that’s the risk-taker in me :)

Daily ritual: It depends if I’m at home or on the road for travel. But typically it starts with caffeinated coffee (a must!) followed by heading to the gym 3x a week and then going through emails & responding to as many as I can before the real work starts. Rinse and repeat.

The most rewarding part of my job is: Seeing my business ideas & collaborations come to fruition when I work with clients. I also speak at a lot of events for both Smart Cookies and Bratface Marketing and nothing makes me happier than sharing my story, ideas and inspiration with others.

What has been your biggest strength that’s helped you succeed in your industry? My go-gettem’ attitude, tenacity and ballsy nature. I will try anything once and it has certainly taken me far and opened doors I never thought possible. I literally flew to NYC last summer and had set up over 20 business meetings with influencers and business people. Amazing the connections I made & people I met.

Memorable celebrity encounter/interview: Duh, Oprah! Meeting her, being a guest on her show and seeing Harpo Studios behind the scenes was a-m-a-z-i-n-g and an opportunity I will forever be grateful for. Not once but twice.

Where do you go for some retail therapy? Being a Smart Cookie and all I try to curb my spending when I can but spend wisely when I do. I love Anthropology for unique items & new designers (excited they are coming to Vancouver!), H&M for cheap thrills, Joe Fresh for affordable fashion-forward items and Club Monaco for the classic, long-lasting items.

Dream vacation spot? In one of those amazing water front cabins in Bora Bora. I wonder if there is a Smart Cookie way to do such a trip? *sigh*

What has been your favourite event to attend? Oh don’t make me choose! So many of them! The CRAVE Company events are always great for networking & getting some good info. The FWE is very valuable & worth its weight in gold. But if I could dream of one to attend, it would be NYC Fashion Week :)

Favourite hangout: I recently fell in love with the Fairmont Pacific Rim Lobby Lounge. They have such a great atmosphere, food and wine and awesome jazz artists that are quite impressive.

Favourite childhood memory: Spending summers up at our cottage in Haliburton, Ontario.

What is your favourite ice-cream flavor? Sweet + simple vanilla

If there was more time in the day you would: I would read more. I really have to get better about that considering I have many business books & subscribe to 5 magazines!

Favourite Blog: Because I’m a marketer, I love Seth Godin’s blog but I also love Design*Sponge & The Pioneer Woman. All amazing blogs in their own way to fulfill all my guilty pleasures (food, home decor and marketing).

Last song you downloaded: Robyn’s new CD’s Body Talk Prt 1 & 2. She has finally found her groove since her pop days in the 90’s.

I now have a quarterly newsletter people can sign up via my website’s home page. We are also regularly contributing to Design*Sponge’s Biz Ladies section which is jam-packed with great small business information. We (Bratface Marketing) were also signed on as regular contributors to a new radio show on 650 CISL AM called “The Broad Perspective”. I will be speaking twice a month on all topics business and marketing.

Who is your role model/mentor: Since I was a little girl I have always admired Katie Couric for her strength and intelligence. Not to mention I think she has always done a great job being fashionable, while still being taken seriously. When she left The Today Show, it threw off my whole morning routine.

What do you like most about your job: I like the fact that every day is different and because I have worked for Grace since 2003, I think she trusts me and lets me get involved in a lot of different areas of her brand that I probably wouldn’t be able to if I worked for a larger, more corporate-style company. Since most of her staff has been with the magazine for several years, we have formed this odd little family.

Daily ritual: I cannot leave my house without eating breakfast, watching the news and walking my dog. Without this little routine my whole day is doomed. From there work changes daily and then at night it’s time to walk my dog again, cook or order dinner (I don’t get in the kitchen nearly as much as I should), and then you will probably find me on the computer, reading or indulging in some reality TV—I’m such a sucker for Bravo.

The most rewarding part of my job is: Telling a client or contributor good news. Sometimes I forget how much of an icon Grace is in the industry, and reactions to finding out their work will be in the magazine have varied from screaming on the other end of the phone (my ear still hurts from that one, but it made my day), to explanations about how this has always been their dream and what they strive to achieve, to complete joy. I have never been one to work somewhere for a short period of time, and the relationships I have built with people over these past eight years have been amazing. I have heard about breakups, engagement, divorces, weddings, babies, and of course more personal things. I don’t get to travel a lot with the workload I have to contend with in house, so I have met so few of these people in person, but between Facebook, Twitter and emails galore, I feel like they have all become my friends and I am honored to have had the privilege to e-meet so many incredible people.

What has been your biggest strength that’s helped you succeed in your industry? Have I succeeded? I take my job very seriously and I work so hard, but there is always room for improvement.

Memorable celebrity encounter/interview: When I first started working here, I went to Bridal Market in New York City with our fashion director, Tracy Trouf, twice. Going backstage to meet the designers put me in awe. I got to meet Oscar de la Renta, Carolina Herrera, Reem Acra, Monique Lhuillier, Romona Keveza, Ines Di Santo, Kenneth Pool, Melissa Sweet and so many more. After the Melissa Sweet show, Tracy and I went backstage and somehow or another, the two of us, along with our photographer, Mike Colón, ended up getting invited to meet up with Melissa for cocktails at Spice Market in the city’s Meatpacking District. I had to pinch myself to see if it was really happening.

Where do you go for some retail therapy? I have tried to be good, but my weakness is actually shopping online. I get so many of those coupon codes via email and when the moment strikes, well, watch out. I have a particular weakness for shoes.

Dream vacation spot? My dream spot is Venice, but I am just dying to go anywhere in Europe. My husband and I are actually finally going to the UK in late August after all of The Royal Wedding hoopla is over and I can’t wait!

What has been your favourite event to attend? I am a huge music person. My life has a soundtrack of varied styles and every memorable moment has a song that I associate with it, so when I can get to a concert, any concert, it is memorable. Hearing an artist live is completely different than listening to one of their tracks on your iPod.

Favourite hangout: I have been blessed to have the same group of friends since I was 12, plus a close group of people who I have met along the way. So anything that involves cocktails, friends and laughing is my kind of night. To be honest, one of my favorite spots is a local dive bar near my house and if I tell you the name, it will become the next it spot, so I will have to keep it to myself.

Favourite childhood memory: You will never believe me, but on my first birthday in addition to cake, presents and being the total center of attention I got to have my first lollipop. It was grape and I swear I can remember exactly how it tastes. Other memorable moments include being the second in my family to graduate college (everyone was so proud), my wedding day to the love of my life back in 2009, and adopting a puppy last year. I just love her to pieces.

What is your favourite ice-cream flavor? How embarrassing. I am actually lactose intolerant, but what they have done with soy, tofu and lactaid ice cream is pretty amazing. However, the flavors are still limited so I am just happy to get a scoop of anything that won’t make me sick afterward.

If there was more time in the day you would: Do more. I have a bucket list. Doesn’t everyone? And I have barely done anything on it. I think we need to take the lead of Europe and take more vacations, longer lunches and enjoy life a bit more.

Favourite social network: I will admit it, I used to be slightly addicted to Facebook, but now I only access it through my phone and do not log on through a computer for personal use, otherwise I might get sucked back in.

Favourite Blog: Ours, haha … but before we had ours, when I was planning my wedding I had a few, although I am still mainly a sucker for reading a magazine. After studying journalism and graphic design in college, nothing beats flipping those pages while sipping on some hot tea or coffee and I am proud to say that 95% of my wedding was planned via Wedding Style.

Last song you downloaded: I don’t even know, but artists I love include Florence and The Machine, Black Eyed Peas, Kings of Leon, Moss Def, Robin Thicke, old school Madonna, anything 80s and so on.

"We have been having lots of round-table discussions and really trying to bring the brand to another level. Although I curse the time social media takes up, without it I don’t think companies would be as widely accessible. From Facebook, to Twitter, to our blog, websites, the magazines, Grace’s new book, and other marketing projects there is always something new."

Where will you have your wedding photos?

Everyone loves Gastown, West Vancouver and Stanley Park, but there are some hidden gems in these particular places that we love as wedding photo backdrops.

Gastown; a hip, historical corner of Vancouver city - with a lot of beautiful brick. Blood Alley is one of the most surprising narrow streets in Vancouver. With dim lighting, raw building materials and contemporary hidden restaurants, this secret alley makes for magical photos.

Stanley Park is another stunning place to consider for engagement or wedding photos. Covered with soft cherry blossoms in the spring, romantic bridges and sculptural piece in the park, this backdrop is timeless. There is one area of the park that isn't well know - the sea wall under the light house park. Interesting concrete archways and hints of natural light creates a modern & impactful look.

If you grew up on the North Shore you know of many beautiful, natural hideaways. One of our favourite quaint beaches in West Vancouver is Sandy Cover. This little beach is obscured by residential homes where the walkway is under a bridge, down stairs and into pure greenery. At the bottom, an intimate beach awaits you and your loved one. This particular place is beautiful at sunset, when the tides is still low enough to take photos in the stone cave to the right of the beach. To get to Sandy Cove, drive west on Marine Drive about a mile past Dundarave Beach, until you see a small bridge and a street called Rose Crescent. The trail begins under the bridge.

These small details that can be overlooked, are actually layers of style that create a unique bride. Wedding accessories can be sentimental and personal, or simply glamorous and impressive. For those future anniversaries or dates with your husband, remind him of that special day by occasionally bringing out your wedding gems. Like the dress itself, a wedding accessory will never lose the memory attached to it.

Who is your role model/mentor: Love the work of Paolo Roversi, so moody and full of texture. Tim Walker is another favourite. His use of natural light is amazing.

What do you like most about your job: It’s the flexibility and creativity that our clients allow us on their wedding day to capture and create beautiful works of art for their lives and for their homes.

Daily ritual: First thing, hit the email, Facebook (of course); finish the day’s editing work, dinner with hubby and then some down time with my friend, ipod.

The most rewarding part of my job is: Hearing that our work allows the couple to relive their day and seeing the look on their face when they open up their beautiful custom album for the first time.

What has been your biggest strength that’s helped you succeed in your industry? I think you definitely have to be a people person and learn to work well with others. You, as a photographer are not the only person working on a client’s wedding and you have to be respectful of the other vendors that are working just as hard to make that day a success.

Memorable celebrity encounter/interview: Getting to photograph Rich Harden (an MLB pitcher for the Oakland Athletics) as he was a guest and close friend of one of our grooms. Jason was pretty excited.

Where do you go for some retail therapy? I love home decor stores but not so much for the items but I go to look at the packaging, I love paper and design, anything that sparkles! Often times I’ll buy something just because of the box it comes in.

Dream vacation spot? Anywhere with warm water as our favourite thing to do on vacation is snorkel. So if I had to pick one place, possibly the Maldives.

What has been your favourite event to attend? I would have to say WPPI (a photography convention) down in Las Vegas. Again, a perfect place for me, it’s so full of artistic design and gorgeous stores to shop at everywhere.

Favourite hangout: My couch, with my hubby and a good movie.

Favourite childhood memory: Going exploring with my Dad on Vancouver Island. Being out in Nature is another love of mine. I can never get enough of how intricate and beautiful our world is.

What is your favourite ice-cream flavor? Mint Chocolate Chip

If there was more time in the day you would: Design and create EVERYTHING in my sketchbook, projects ranging from packaging and artwork to chandeliers and inventions. I’m somewhat of a visual person, when I get a new idea I can see it completed and in its finished state and it makes me want to see it in a tangible form. It’s why I have Jason, to keep focused as an artist so I spend my time on the good ideas.

Favourite social network: Facebook, it’s much more visual than twitter.

Favourite Blog: A recent new favourite site is http://the99percent.com/ as it’s a great learning resource for us artists.

Last song you downloaded: Bach - Cello Suite No. 1 in G Major. I love movie soundtracks. Especially ones with a very moving feel to them.

What do you like most about your job: It is challenging, interesting and very fulfilling (and I can’t get fired)!

Daily ritual: Heading to the studio every morning and seeing new concepts develop and transform into a new wedding gown.

The most rewarding part of my job is: Satisfied brides that express the same feeling I did when I wore three Ines Di Santo wedding gowns 3.5 years ago!

What has been your biggest strength that’s helped you succeed in your industry? Staying true to our personal design and look. Not trying to emulate or be someone else. Not trying to fit into a current trend or style. Being fashion forward and taking risks!

Memorable celebrity encounter/interview: Recently working with Serena Williams for the Vanity Fair Oscar Party. She has a personal sense of style and is discerning in a way that I think that comes from an Athlete’s state of mind.

Where do you go for some retail therapy? I always looked at the leaders in fashion for their drama, personal expression and unique signature in the fashion world: a few greats that come to mind are Christian Dior, Valentino, Alexander McQueen (RIP)

What has been your favorite event to attend? Our runway show in October. It is such an emotional flood of feelings to see all of your hard work over several months presented to a group of Fashionistas.

Favourite hangout: Our studio and my home!

Favorite childhood memory: Wearing so many dresses over the years as a young child, then prom, then graduation and weddings and always having people pull me aside and ask “where did you get that dress?!”

If there was more time in the day you would: I would spend more time outdoors and enjoy nature!

Last song you downloaded: “if you leave” by OMD. These days I find I am obsessed with 80’s music (not fashion)!

Crème de la Crème Grand Wedding Showcase - Vintage Glamour Table Design

Crème de la Crème Grand Wedding Showcase is the most opulent event of the year. This one of a kind luxe bridal showcase exudes style, artistry and excellence. CountDown Events, being the backbone of Crème de la Crème, focuses their hearts and souls into this event each year. Each year brides are presented with "Signature Design Tables" showcasing the latest trends and wedding design ideas. Here is one of our favourite tables at the "Amore" show in 2010. Soha Lavin and the team at CountDown Events as the producers of the showcase, in collaboration with Upright Decor and GIF continue to prove their talent and class by creating breath taking designs, like this one.

As always, the famed Colin Upright of Upright Decor, created an elegant backdrop for an array of design inspirations for the brides.

GIF outdid themselves with this majestic assortment of vintage, antique, David Austin & Ecuadorian roses; creating a beautiful focal point.

Layer upon layer, Wintons Social Stationery composed a perfect amethyst invitation for this particular decor setting.

Who is your role model/mentor:

1. My mother. All I can say is that she’s the tough one in the family. I admire her working hard ethics and her loyalty.

2. My boyfriend, my life partner. I always tell him he’s the smartest guy I know. I look up to him and he gives me strength when I don’t have it.

What do you like most about your job:

The shoes of course! Being a buyer is the best job in the world. You have someone else’s money and you get to go out into the market to find product. I’ve traveled to some great places for work and every trip brings new experiences.

Daily ritual:

I get up around 630 am and take my dog for a walk. Before I speed off to the office, I take a few minutes to quickly check up on personal emails. Once I get to the office I check my emails. The rest of the day is filled with appointments with vendors, working programs, and dealing with the “day to day” challenges of the business. At the end of the day, I really look forward to going home to my boyfriend, my dog and a good meal.

The most rewarding part of my job is:

Nothing kicks in the adrenaline more than seeing the products that I bought and/or developed, fly off the shelves. I love being right!

What has been your biggest strength that’s helped you succeed in your industry?

I hate to say it, but my easy going and “Sunny” personality. I’ve worked with and have met a lot of really great people along the way and have built great relationships by building trust.

Where do you go for some retail therapy?

I don’t have one favourite shop. I shop literally everywhere. I obviously shop at my own stores, Sterling Shoes and LynnStevens for clothes in Gastown as well as The Cross Designs in Yaletown for home chachkas.

What has been your favourite event to attend?

Breakfast Television hosted CountDown Events this week to showcase the Royal Wedding and "What to Expect". Soha Lavin, Canada's wedding expert and event planner extraordinaire, has been on ‘Royal Wedding Watch’; CountDown Events Planning & Design, renowned wedding and special events planning company led by Lavin, is committed to capturing every detail of the Royal Wedding - down to the gown, jewels and decor.

Queen Elizabeth's Royal Wedding cake on November 20, 1947 was a four-tier ten foot high wedding cake. It was made with ingredients given by Australian Girl Guides. The wedding cake was cut using The Duke's Mountbatten sword. After the wedding, pieces of cake were given to schoolchildren and institutions.

The Princess will wear a breathtaking design but will need to follow some traditions and etiquette such as having her shoulders covered as have a long line of princesses.

A Royal Wedding Jewel - Inspired by Princess Diana

Inspired by one of Diana's most famosly worn saphire and pearl necklaces

As an engagement gift to Diana in 1981, Queen Elizabeth gave her a large 20 carat sapphire brooch surrounded by two rows of diamonds. Diana later added rows of pearls to the brooch and turned it into a choker. Most remembered her wearing this piece the night she danced at the White House with John Travolta in 1985. This saphire swarovski crystal and pearl three strand jewel by Elsa Corsi, captures the royalty of the blue sapphire necklace Diana once loved.

"Swarovski Elements" simulated pearls - Slightly heavier than real pearls, they do drape very nicely. Unlike most imitation pearls, Swarovski Pearls are made over a glass core which is what gives them their weight. They are very scratch resistant too, and unlike real pearls, are also more resistant to the effects of perfume, hairspray, makeup, and other solvents and abrasives - all of which can damage pearls.

Any bride would look like a princess in a stunning jewel like this one, inspired by Princess Diana.

On March 11, 2011 - a 9.0 magnitude earthquake struck Japan and set off a tsunami, causing major damage. Last Friday was "For Japan with Love" a fundraiser online to raise money to help those that were effected by the devastating natural disaster. In the last four days, this organization has raised an inspiring $54,737.

In honor of this cause we did not post a blog on Friday, but we are extremely excited to feature Jillian Crago on our blog as the unique (Monday) #FF!

Who is your role model/mentor: Rachel Zoe is always such an inspiration & amazing businesswoman to look up to, as well as the ladies from ‘Who What Wear’. At the end of the day though it’s always my mom – she’s my best friend & understands me better than anyone else.

What do you like most about your job: It allows me to express my creativity in an industry I love. It’s the most rewarding feeling having a vision for a project and watching it take life.

Daily ritual: Coffee in the morning (preferably with almond milk & brown sugar) and my vitamins to keep me going. I also never leave the house without putting on my illuminating tinted moisturizer by Laura Mercier – I swear by it.

The most rewarding part of my job is: The sky’s the limit & anything is attainable if you set your mind to it.

What has been your biggest strength that’s helped you succeed in your industry? My drive to succeed, and my ability to change, adapt, and grow with an ever changing industry.

Memorable celebrity encounter/interview: Meeting Gabrielle Aubry at the Louis Vuitton party this past winter… he doesn’t even look real, it’s ridiculous!

Where do you go for some retail therapy? Anywhere there is retail! I don’t have one specific place that’s my ‘go to’ it always fully depends on what I’m looking for. I work at Boudoir in Yaletown as well so it’s always way too convenient to soothe my soul there. However I love spending an afternoon on South Granville, or checking out the other boutiques in Yaletown & Gastown.

What has been your favourite event to attend? I love going to events and meeting new people but my favorite would definitely be the Louis Vuitton party. There was so much secrecy behind the event so there was major suspense building up to it. Everything from taking the train to the LV club was amazing.

Favourite hangout: I live in Yaletown so usually find myself spending a lot of time in the neighborhood but Gastown is definitely a favorite to go for dinner and drinks. My favorite spot to hang at on a sunny Sunday is the patio at Provence, can’t beat it. I’m a huge summer person too so when it’s hot out I couldn’t be happier at the beach, boating, or on a patio.

Favourite childhood memory: Growing up in small town Cranbrook in a super tight knit family we spent a lot of time together. Every weekend we would be skiing, camping, hiking, or spending long days at the lake. I wouldn’t trade my childhood for anything. I think it’s made me a better person today and well rounded, having such a grounded upbringing with a family that is always my biggest support system.

If there was more time in the day you would: I would take more time to enjoy the small simple things in life that are so easily forgotten about. You know that old saying “take time to smell the roses”.

The Art of Sweetness

It's true we are so lucky in Vancouver to enjoy an amazing restaurant scene! One of my favourite things (there are many) of event planning is of course the perfect ending to a beautiful meal with a delicious dessert. I spend just as much time carefully planning the dessert course as I do planning the rest of the menu; I always say you want your guests to finish on a high note. Recently at dinner with a dear friend I had to pause and take in the beauty of my dessert plate! An absolute work of art and yet totally unpretentious. The Warm Chocolate Tart from Vancouver's new restaurant darling L'Abattoir proved to be delicious with every bite with a vanilla yogurt custard and meyer lemon mascarpone ice cream. A truly perfect finale that I just had to share!

Royal Wedding - Prime Minister, Stephen Harper will be Attending the Wedding of the Century

The Royal family has invited 1,900 guests to attend Kate and William's wedding. Media has reported that Elton John, Kanye West, Victoria and David Beckham are just a few that have received invitations, as well as our Prime Minister - Stephen Harper and wife, Laureen Harper.

Stephen declared today "Canada is one of sixteen realm countries in the Commonwealth and I am delighted that Laureen and I will be able to attend this very historic and happy moment." Last fall when the Royal Engagement was announced, Stephen Harper invited Kate and William to come for a visit. The newly weds will be in Canada from June 30 to July 8th visiting places such as Quebec, Prince Edward Island, Alberta, Northwest Territories and the National Capital Region.

Update on the Royal Wedding - Kate Middleton's Dress by Sarah Burton of Alexander McQueen

The Sunday Times was the first source to report that McQueen had landed the coveted job of designing Kate Middlton’s wedding dress, to be worn on April 29th, 2011. The Sunday Times is sticking to their story despite the fact that Prince William’s office told CNN “We’re saying nothing.”

Middleton will be working with Sarah Burton on the design of the dress. Sarah Burton was appointed creative director of Alexander McQueen in 2010. She is known to have a quirky interpretation of high fashion and an alternative taste in elegance.

The fact that Alexander McQueen was being considered as a designer for the Royal Wedding Gown, wasn't a surprise. It is not a well know fact that Prince William's step-sister, Sara Buys, writes for Harper's Bazaar high fashion magazine and married in an Alexander McQueen dress herself. Perhaps Sara's couture edge helped influence Kate's decision, since Kate's style has always been Conservative and safe.

CountDown Events team had a wonderful time working with the Forum for Women Entrepreneurs, who hosted their grand "sold out" Gala celebrating women business owners in the wine industry. Once Upon a Grapevine took place at the beautiful Fairmont Waterfront Hotel, Vancouver. What an exciting and inspiring event with a highlight by Gordon Campbell, his last public speech as the Premier of British Columbia.

Some of the BC winery owners and experts shared their stories and visions on Wine and Business. Sandra Oldfield owner of Tinhorn Creek Vineyards, Tony Stewart from Quails' Gate Winery and Daenna Van Mulligen from Wine Diva, were all celebrated at the Gala.

Who is your role model: My folks. They have been huge influences in my life—I was raised vegetarian and my mum taught yoga for over 30 years. A healthy lifestyle has been an important factor growing up. Both of them are avid travellers, so I’ve definitely been influenced from my travels with them when I was younger -- hiking in Chile or doing a bike tour in Croatia.

What do you like most about your job: It is never the same. You’re always on the next trend, next shoot and next idea. I’ve never been described as a wallflower, so I love collaborating with amazingly creative photographers, make-up artists and producers. I’ve also been lucky enough to travel quite a bit on location shoots. St. Lucia in January? Yes, please.

What made you pursue a career in fashion? I’ve always been obsessed with magazines ever since I was little. I would read (and by read, I mean love the pictures) my mum’s Vogue and I would devour my YM subscription each month.

Valentine's Day Recipes by Culinary Capers Catering

If you're planning something special for your loved one this Valentine's Day, why not stay in and surprise him/her with your culinary cooking skills! In honour of Valentine's Day, Culinary Capers Catering, one of our own Crème de la Crème Grand Wedding showcase partners has provided some mouth watering, simple dessert recipes to "top the cherry" on your romantic dinner!

Roasted Pear and Vanilla Crisp

Makes 1 large crisp or 6 individual
12 pears

1/2 cup apple juice

1 cup brown sugar

2/3 cup all-purpose flour
2/3 cup rolled oats

1/2 cup unsalted butter

1 Tbsp cinnamon

2 tsp nutmeg

1/2 tsp dry ginger

1 fresh vanilla bean pod

Preheat oven to 375° F. Peel and core pears. Slice thin.Arrange sliced pears loosely (this is so they roast well) on a baking sheet lined with parchment paper. Place pears in the oven and roast until pears caramelize along the edges, approximately 15 to 20 minutes. Place warm pears in a bowl and mix with apple juice. Cool.Slice vanilla bean down centre and with the back of a knife scrape out the bean. Mix brown sugar, oats, butter, cinnamon, nutmeg, ginger and vanilla bean in large mixing bowl. Combine half the oat mixture with the roasted pears. Put mixture in one large or 6 individual buttered oven proof dishes. Cover with the other half of the mixture. Bake for approx 25 minutes at 350° F. Serve with vanilla ice cream. For added indulgence our pastry chef recommends finishing the crisp with a dusting of powdered sugar, ice cream or fresh whipped cream and a drizzle of warm caramel sauce.

Molten Chocolate Cake (Mmmm need we say more?)

Makes 4 individual Ganache (make this a day ahead)

1/2 cup dark semisweet chocolate, chopped

1/2 cup whipping cream

Place chocolate in a bowl. Boil cream in sauce pot and pour over chocolate. Whisk until chocolate is melted and all is combined. Place a piece of plastic wrap on top and let set over night in the fridge. When ganache is set, make truffles by taking a tablespoon of ganache and rolling them by hand into round balls. Place in the freezer. (This recipe will make a few more balls than you need.)

1/2 cup unsalted butter

3/4 cup dark semisweet chocolate, chopped

2 eggs

2 egg yolks

1 Tbsp all-purpose flour

1/4 cup granulated sugar

Melt the chocolate and the butter in a bowl over a double boiler. Mix until completely melted. Set aside to cool slightly. Butter and flour ramekins very well making sure to use a liberal amount of butter around base of the ramekin. Combine yolks, eggs and sugar in a stainless steel bowl and place over a double boiler. Warm the mixture, stirring constantly until eggs are warm and the sugar is dissolved completely. Transfer the mixture to the bowl of an electric mixer and whip on high until the mixture has doubled in volume and is light and fluffy. Fold 1/3 of the egg mixture into the chocolate. Add the remaining egg mixture into the chocolate, stir gently until incorporated. Sift the flour into the chocolate/egg mix, folding gently. Divide the batter among the ramekins, filling about 3/4 full. Place 1 truffle ball into the center of each cake, making sure it's just covered in batter. Refrigerate for 1 hour.

Preheat oven to 350° F. Place ramekins on a baking tray and bake for approximately 15 minutes. Cakes are done when top is uniformly colored and slightly puffed. Remove from oven and let sit for 3 minutes before unmolding onto a plate. Serve with your favourite ice cream and fresh berries if desired.

A rehearsal dinner is great practice for the actual ceremony and a perfect place to host your loved ones for a mini-reunion before the wedding. Whether you're feeling wedding jitters and want to be prepared or just want to welcome & introduce your new family to each other, it's an important step before the wedding day. "How far in advance do we book the venue?", "should we prepare a speech?", are all good questions to be asking and you will find answers to these questions as we explain this modern tradition.

Wikipedia defines the rehearsal dinner as "a pre-wedding ceremony in North American tradition, usually held after the wedding rehearsal and the night before the wedding ceremony." Since the function of the rehearsal dinner is to thank all those who have helped in the wedding party and is paid for (traditionally) by the groom's family, you can choose to have it wherever you like. Although, it would be a good idea to choose a restaurant or venue that represents the couple's personality and wedding style. Rehearsals are also a lot more casual than the actual wedding. From a patio BBQ to a fancy restaurant, make sure the venue is booked months in advance. Once the wedding venue has been set, the bride and groom can start thinking about where to host the rehearsal dinner, as most take place the night before the wedding. Although typically the rehearsal dinner takes place the evening before the wedding; we like to recommend looking at booking the rehearsal dinner two nights before if possible, to allow the evening before as a time for restful preparation.

The lovely couple hosted their close family and friends at this intimate location the night before the wedding. The dimly lit candles, vibrant blue colours all added a sense of ambience, romance and excitement to the entire evening, which set the tone for the perfect wedding.

Other things you might want to consider are whether or not you want to have a seating chart, depending on how well your guests know each other and how comfortable they feel. Of course speeches are always a great introduction for your guests and great practice for the actual wedding dinner. They are given at the start of the first course and remember to keep them short and sweet! Usually speeches are spontaneous and some can be in the form of a "roast," given by any of your guests. It's usually customary for the host to toast the bride and groom, thanking the out of town guests and wedding party for coming. This is usually reciprocated by a responce from the bride and groom.

What has been your favourite event to attend? At the risk of sounding cliché, my wedding. It was super-intimate, with just my parents, my husband and I. We were married on the most gorgeous February day in 2009 at Langdon Hall in Cambridge—one of our favourite places. It was so personal and absolutely perfect.

Favourite hangout: I adore the Windsor Arms for afternoon tea. Studio Café at the Four Seasons Toronto for breakfast. But my favourite hangout is probably at home.

Favourite childhood memory: Everything. I had a wonderful childhood and the most amazing parents, grandparents and friends. Everyday was an adventure.

In order to find how to personalize your wedding day look and incorporate your individual style, we ask, what inspires you to make these fashion choices? Sonia Leal-Serafim from They Representation and celebrity stylist reminds us, "inspiration can come from anywhere or anyone. I was once inspired by coffee grounds. I thought the colour was so rich and flattering to olive skin that I did a photo shoot using coffee grounds for a Colombian beach theme."

Once you've found your inspiration, the next step is to choose the style that works best for you. From sophisticated glam to sexy or a natural, clean look, choose the style that reflects your personality and features. Don't be shy about talking to your hair stylist about which look you're going for. It is then up to the experts, who are knowledgeable about which products to use to maximise your hair type.

Sonia customizes based on the bride's, "personal self-image... her experiences as well as her own desire for how she wants to look for her special day...using an assortment of the best products... The bride may want a long, loose slightly wavy half up do and if she has short or thin hair, I will use hair extensions or hair pieces. I also alter the products I use based on allergies to cosmetics, oily shiny skin, dry skin, the season and weather for the day. The amount of humidity has a huge effect on makeup and hair."

With the boho-chic trend that crept it's way into 2010 and a handful of actresses showing off their sun kissed, Ombre tresses, it looks like 2011 will continue to illustrate a natural, low key style. "I predict a movement towards more effortless hair. The loose beachy wave we've been seeing in fashion for awhile now is moving into wedding hair. Whether all down, half pulled up or all the hair up, it's loose, subtly sexy and absolutely gorgeous on almost everyone."

On par with hair, makeup is showing a relaxed, natural glow. "I believe we are moving away from the dewy skin look that can tend to photograph sweaty and greasy looking. Instead, nice smooth matte skin with statically highlighted areas, " she adds.

With over 20 years of experience as a celebrity fashion/ makeup and hair artist, Sonia has worked with many Hollywood talents, such as Oscar nominee Ellen Page, Oscar winner Meg Tilly, Kelly Rowland of Destiny's Child, Grammy Award winners John Mayer, Duran Duran, Fergie, INXS and many more. The Royal Report: A Love Story

Since the Royals announced the engagement of Britain's biggest bachelor, (Prince William) to sweetheart Kate Middleton, back in November, we've all been anticipating the details of what most consider to be the most lavish wedding of the decade. Since our invitations must have gotten lost in the mail, we've decided to bring you all the wedding highlights and updates from Kate's grand entrance to the official engagement photos taken by Mario Testino (pictured below).

The love story began nine years ago, when Kate and William both attended St. Andrew's University in Scotland and blossomed into a romance when the Prince decided, "we just spent more time together, we had a good giggle and realised we shared some interests" (The UK Telegraph reports). After dating for eight years, the 28 year old, proposed while the couple was travelling in Kenya with his late mother's (Princess Diana's) royal rock. The most romantic gesture was how the Prince wanted to include his late mother in their new life together by proposing to Kate with this 18-carat sapphire and diamond ring (below).

With the wedding date set for 11am on April 29 at Westminster Abbey, it was just announced on Twitter that the couple will be arriving by car, but if you want a glimpse of the newlyweds, they will be routing on carriage to Buckingham palace after the ceremony. The schedule will include a service by three churchman, a reception hosted by the Queen at the Palace and of course no wedding is complete without dinner and dancing. Rumour is that Sir Paul McCartney has been asked to entertain that night. Other rumoured guests include David Beckham and Posh Spice.

Now the biggest question that's on everyone's mind is what will the bride wear? (no pressure Kate).

That’s a tough one but I’d have to say I loved making this five foot tall cake with hundreds of edible flowers and 24k golden scrolls for one of my bride’s Jasmine. Sometimes you have an instant cake chemistry from cake designer to bride and Jasmine and I had so much fun “cake plotting” her wedding cake that it made me want to push myself o give her the best cake.

I have a weakness for anthropologie. I heart everything in that store.

Tom Cruise when he was doing interviews for Vanilla Sky.

CountDown Events at NYC Bridal Fashion Week!

As the producer of the most opulent wedding event of the year, I definitely recognize the importance of creating something extraordinary to present to brides! Our fashion show is bar-none the most luxurious bridal fashion show the city has ever seen. It is the centerpiece of Crème de la Crème Grand Wedding Showcase. So when the opportunity arose to sit front row at one of the hottest bridal fashion shows in the world, and in one of my favorite cities, I simply could not contain my excitement! To me, New York is the epitome of CHIC!

First stop Romona Keveza

The collection was presented at the luxe penthouse suite of the Palace Hotel on Madison Avenue! The hotel is an iconic venue for weddings in New York.

Romona Keveza is absolutely lovely! It was such a pleasure to meet her and one of her amazing designers Orlando Cosmelle. Present at this exclusive showing was none other than Mark Ingram and our own fabulous atelier Lorna Paterson Blush Bridal & Special Occasions.

Legends by Romona Keveza is influenced by the style of Jacqueline Kennedy in the White House Era, showing American royalty at its finest featuring classic chic, timeless silhouettes that present a marriage of Parisian style with all American spirit.

Next stop over to the Chelsea Gallery district to watch the incredible Priscilla of Boston collections. Vineyard, Melissa Sweet, Jewel, Reverie and Platinum for Priscilla of Boston. In attendance were all of the A-list media! And some TV personalities such as Randy Fenoli from Kleinfeld.

Awaiting the start of the show as guests are being ushered in using a garage sized elevator!

A short skirt can really accentuate a good heel and not to mention your legs.

Loved watching the front row viewing the designs as the models came down the runways.

And finally over to see the incredibly talented Canadian Designers Ines Di Santo and Veronica Di Santo. I have to say this was my favourite part of the entire trip! The designs were immaculate to say the least and the room was filled with VIPs like Grace Ormonde, Martha Stewart's Darcy Miller and The Knot's Carley Roney to name a few. The room was gorgeous! Unfortunately my photos are not the best...not to mention you can't feel the buzz that was in the room. Let's just say it was fabulous!

And of course this whirlwind trip would not be complete without the queen of wedding gowns Monique Lhuillier. This was definitely a highlight! Loved the dresses, the fabrics, textures and the fantastic music! Again front row...I have to say I felt pretty lucky!

The shows proved inspirational and gave us insight into the upcoming trends. With plenty of cinched waists, soft pink hues, floral and flowing textured fabrics, we're excited to start planning for the upcoming season in 2011.

Our list of Favourite Things to Do In Vancouver Around the Holidays

If you're thinking of staying in and around the city for the holidays, there are plenty of things to see and do in this beautiful city. Our little helpers have compiled a list of the best kept secrets to keep you entertained and get you in the holiday spirit.

1.) Vancouver's Winter Farmers Market at Nat Bailey Stadium takes place every Saturday from 10am - 2pm and you'll find all locally harvested, fresh meat and produce. Our favourites are the homemade jams, maple taffy, fine fudge and peanut brittle. If you're feeling guilty about the holiday calories, there are plenty of gluten-free, sugar-free, vegan treats as well. The added bonus is the buskers that provide family friendly entertainment.

2.) As we get closer to Cristmas Day, one of our favourite places to go is Kerrisdale Village (0pen Saturdays noon-5p) Such a quaint place to shop and the best part is all the free attractions, which include horse & carriage rides, live music and meeting Santa!

3.) The holidays aren't complete without a lights show. The Festival of Lights will make you want to decorate your block, so it's visible from Mars. Dancing Lights on Livingstone Lake light show includes two different shows in the hour. The kid in all of us will appreciate the Candy Cane model train and choir concerts. Santa makes four appearances daily from Dec.10 - 24.

4.) Now if you feel like riding the actual trains, visit the 13th annual Bright Lights in Stanley Park and enjoy the scenery as you go through the forest and watch 2 million lights. For 9$ your admission also includes visiting the children's farmyard.

5.) Of course, you can't go shopping without noticing the creative and whimsical window displays. One of our favourite places to visit is Woodward's Window Displays located in five different locations across downtown Vancouver. Take the walking tour to discover these hidden gems.

Well, it probably wasn’t the most over-the-top-event, but a more humble event for an elderly couple who were celebrating their 80th birthday and also their 60th wedding anniversary. They were the cutest couple. They had so much energy, such a good outlook on life.

Is there an annual event that you look forward to attending?

Crème de la Crème, the months of hard work and finally seeing it through! It’s quite the event!

2011 Colour of the year! Let's Paint the Town Honeysuckle!

As we approach the new year, it's time to take off those rose coloured glasses and replace them with honeysuckle because that is exactly what Pantone has just announced as their 2011 colour of the year. This uplifting and vital reddish pink hue, has been described by the Pantone colour Institute as a"captivating, stimulating colour that gets the adrenaline going – perfect to ward off the blues," which to me seems like the best way to ring in the new year.

This vigorous and enchanting colour reminds us of flowers, summer days and ultra-feminine dresses.

Who is your role model/mentor:

Anyone who is self employed and in a creative field. I think anyone who follows their passion in the arts is someone I want to know. It takes a lot of guts and a bit of craziness to put yourself out there in a creative way, hoping to get paid for it.

What do you like most about your job:

Being a part of someone’s memory at such a special time in their lives. They will always remember their wedding gown. It also makes me want to do the best job possible.

Daily ritual:

Make a cup of tea, turn on the news and check my email , plug in the iron. Oh, and of course say “Morning!” to my BFF on messenger. Then I spend the day in my work room or doing fittings, usually running between the two. Make dinner, go to the gym and then a little more work . Once I feel I have gotten enough done on my to-do list, I finally hit the hay with a book.

Is there an event you didn’t get to go to but wish you had:

I really regret not going to see U2 when they were in Toronto. Seeing them in concert is on my bucket list.

Favourite dress design and why:

My favorite designs are always the most recent ones I am working on. I always like what is new. I also think that with each dress my skills improve. Right now I am loving anything with hand made flowers as I haven’t done a lot of that before, but they are turning out really nice!

Memorable celebrity encounter:

Believe it or not, I was in Harrod’s London in the wedding gown department looking at the dresses when my friend came over to me and whispered in my ear that on one side of me was Posh Spice and the other side was David Beckham. It was when Victoria was pregnant and they were planning their wedding. My friend was strongly suggesting that I give them my card! Being a professional I didn’t think it was appropriate to give them my card in another persons bridal shop. Man, sometimes I am too nice (and a little shy!) And yes, he is that handsome in person.

Favourite hangout:

In my hot tub sipping a glass of wine with my special someone.

Which designer do you like to wear when you’re not designing?

I wish I was wearing more of BCBG/ Diane von Furstenberg, but usually it is something casual and more practical. I am enjoying the store Zara at the moment.

Favourite childhood memory:

I remember laying in bed at night listening to my mom sew in the next room. I found it amazing that you could create something out of nothing. The obsession started early.

If there was more time in the day you would:

In theory I would like to spend more time with friends and family but in reality I would likely spend it decorating my house or baking.

I have quite a few:

1. For Photography: Patrick Demarchelier, he is a legend and takes gorgeous photos.

2. For Inspiration: My two daughters Bianca (age 4) and Adriana (age 2) for their never-ending natural curiosity about the world around them.

3. For Style: Audrey Hepburn, she was such a classic and loved her elegant fashion-sense and poise.

4. For Life: My Mother, she raised 3 kids, sewed most of our clothes, made home-made play-doh, would bake bread and find time to create beautiful oil paintings. She is the most loving, creative and multi-tasking person I know!

What do you like most about your job:

I love being my own boss, it’s such an amazing sense of freedom where your successes are all your own as well as your failures (aka “Learning Lessons”).

At times it can be tough to try to be disciplined and not waste the afternoon surfing the web and checking out Facebook. It’s all about prioritizing that long “To-Do” List and working through it.

Daily ritual:

Get the girls ready and off to Kindergarten & Day Care, shower, read emails, check out Facebook and my favourite blogs, tackle my “To-Do” List, work on photography edits and invitation designs, write some blog postings, meet with clients, then work some more once the girls are in bed….then sleep!

The best event I’ve been to and am most excited to go to again:

I love the band Depeche Mode (ever since I was 16), whenever they are in town I’m there for sure…I can’t wait until they come back!

Is there an event you didn’t get to go to but wish you had:

I wished I could have attended Weddingbells Magazine’s 25th Anniversary Party, but I had the worst sore throat ever!

What has been your most favourite invitation:

The one that I designed for the beautiful wedding of Jasmin & Sean, their invitation was a handmade silk gate-fold box with Midori ribbon bellyband and crystal closure. All in shades of lilac and gold, the calligraphy was amazing as well – done by Calligraphy by Diane.

Favourite photograph and why:

Besides every one that I take of my kids – my favourite right now is the one of a bride in a gorgeous bridal gown holding pink balloons taken at Paletta Mansion in Burlington, Ontario.

Memorable celebrity encounter:

I had the honour of meeting celebrity/activist Erin Brockovich a couple of months ago and she is such an amazingly inspiring woman. She truly cares about the impact of industry and pollution on the health and environment of the world, she receives about 1200 emails a day regarding health issues and tries to respond and help every single one!

Favourite hangout:

In my bed, with my kids and husband snuggled under the covers and reading books on a Sunday morning.

Which designer do you like to wear for an evening out?

Banana Republic and DKNY, my fantasy outfit would be anything from Marchesa or Chanel.

Favourite childhood memory:

Creating “couture gowns” for Barbie by wrapping tissue around them and securing it with tape.

If there was more time in the day you would:

Spend it hugging my girls, being surrounded by nature and watching the clouds go by.

Who is your role model/mentor:

In the world of publishing, business, and all things creative, it is without a doubt Angela (Editor in Chief and Publisher of WedLuxe). Her drive and high standards for the magazine are what has made it what it is today and I am proud to be able to create it alongside her. Also proud to say she is one of my very best friends as well :).

What do you like most about your job:

I am a magazine addict, and have been from a very young age! As a baby apparently instead of ripping them up I turned the pages and looked at the pictures. My mom bought me my first issue of Seventeen magazine in Grade 4 and from then on I was hooked! Vogue, Harper’s Bazaar and Elle are all piled high on my coffee table, bookshelves, and anywhere else I can put them. So when the opportunity came knocking to work for WedLuxe four years ago, I jumped at the chance.

The best part about my work is the creative side. Thinking up fun themes and having them carried out in the magazine is a dream job. It is always amazing to see our ideas show up in the real-life weddings that are submitted to the magazine. Knowing that we are influencing the trends, is such a surreal feeling.

Daily ritual:

It changes depending on what part of the magazine cycle we are in. On a regular day I am in the office from 9 to 5 calling advertisers meeting new clients and researching the hottest trends and new vendors in each city to include in the newest issue. But I can also be found shopping the stores for the new gowns and accessories to feature in our fashion shoots and on set for all of the editorials we feature.

The best event I’ve been to and am most excited to go to again:

I love going to Bridal Fashion Week in New York. It is always a thrill to sit front row at the Oscar de la Renta show!

Most creative invitation you’ve received:

I didn’t receive it myself but it was an invitation we featured in the last issue. It is a lucite block with crystals and the invitation card was inside the lucite. It was stunning! Palettera from Toronto created it. It is now on display at the Vera Wang Boutique in Toronto.

Best gift bag and item:

It was a gift bag from a Romona Keveza Fashion Show and it had a complete set of Essie nail polishes. All with wedding themed names, in shades of pink and white.

Memorable celebrity encounter:

I have to say in an elevator in New York after the Vera Wang Fall 2009 Collection Show. I got in the elevator and there was Vera herself. I tried to think of something fabulous to say and all I could think of was, “The show was beautiful!” :) I was a touch star struck.

Favourite hangout:

I am a bit of a home body and can be found on my couch most nights, but if I am out it is at a pub with friends or on the weekends most likely shopping.

Who is your favourite wedding dress designer?

Oscar de la Renta holds a soft spot in my heart. When my wedding day comes it will be Oscar.

Favourite childhood memory:

I grew up in Ontario and am a die hard Toronto Maple Leafs Fan, so it has to be my first NHL hockey game with my dad.

If there was more time in the day you would:

Actually go for a run everyday and not just think about doing it.

We Heart Art

Especially when it's for a good cause. If you're an art lover and want to connect with local artists or would like to contribute to a good cause, the Gentle Hands Art Auction is now open to preview until November 27! The online auction brings local Canadian artists together to donate their pieces and most importantly, all proceeds go to the Gentle Hands building expansion to house orphans, kids classrooms and nursery space in Manila, Philippines. The auction will begin on November 28 for three days and you can find out more information on their blog and twitter links.
