We are so honoured to announce that award-winning Culinary Capers Catering will be showcasing their delicious delectables at the most opulent event of the year! Culinary Capers is recognized for their absolutely ravishing cuisine selections and we cannot stop boasting about them being at our show!
We are sure you will agree with us when we say that the menu is by far one of the most important elements when planning a fabulous wedding and event....we all love great food!
So we decided to start by our favourite course "Dessert"
Whether it’s a sit-down dinner affair with a dessert buffet or a full dinner buffet, guests really enjoy a petite dessert display. Petite desserts allow guests to try lots of delicious miniature-sized sweets served in a variety of presentations.

An amazing dessert selection such as this can only follow a mouth watering savoury entree which brings us to the rest of the menu planning! A perfect wedding for your guests is about their enjoyment and comfort. Keeping those two key ingredients in mind Culinary Capers painted the perfect picture for us.
For weddings of up to 125 people we have designed a sit-down plated setup combined with a food station type affair. For the menu below the couple wanted Tuscan inspired tastes with a west coast flair. The evening began with a reception of passed hors d’oeuvres along with sushi and oyster stations.
For dinner we created a menu that had guests enjoying a plated first course then for their “entrée” they were able to “graze” on three action food stations served individually by chefs. The dinner was completed with a plated dessert trio served at the table.
West Coast / Tuscan Inspired Wedding Menu
Hors d’oeuvre (passed)
Polenta cup with chicken and piave cheese braised chicken in red wine and rosemary
Crispy cheese orzo croquettes with a creamy sauce made with BC Farmhouse aged cheddar served with a truffle mayonnaise
Sablefish brandade with spiced tomato jam and coriander preserved lemon served on a ceramic spoon
Foie gras parfait with kumquat preserve, pumpkin seed and Balanese sea salt served on a silver spoon

and topped with house-made marinated vegetables
Edible spoon with Tuscan salad roasted peppers, fontina cheese, smoked tomato mayonnaise, basil, crispy capers and dried black olives

Grilled Beef Florentine rubbed with cracked pepper and sea salt accompanied by Tuscan grilled panzanella salad, warm white beans and served with a smoky tomato jus

Fennel pollen dusted pacific lingcod served with a citrus garden salad and lemon risotto cake
Grilled Rack of Lamb and Gnocchi Station
grilled lamb rack studded with anchovy and garlic served with black sambuca cream served with handmade black pepper gnocchi

Summer Dessert Trio
Petite dolce de leche caramel cheesecake topped with cocoa nib praline
Velvety lemon tart garnished with a sliver of candied lemon zest
Summer berries served in a china ramekin and topped with crunchy crumble, finished with a dollop of crème fraîche
